WARMING TURKEY CHILI RECIPE
Slow Cooker edition
Ingredients:
500g organic minced turkey or organic beef
1 tsp coconut oil
1x onion chopped
1x red & 1 green pepper chopped
1x red chili chopped
3x cloves garlic minced
2x 400g tin tomatoes
2x 400g tin kidney beans drained
1 tsp chilli powder
1 tsp ground cumin
1 tsp dried oregano & fresh coriander
salt & pepper
1x avocado sliced
1x Sweet potato, carrot or squash (optional)
half a scotch bonnet (optional) extra kick!
Directions:
Heat the oil in a large stainless steel frying pan and add the ground turkey. Crumble until almost cooked through but still slightly pink for about 4—5 mins.
Add turkey to your slow cooker along with all the remaining ingredients, and stir until combined.
Cook on low for 6 hours or high for 4 hours, stirring occasionally.
Once cooked, taste and adjust seasonings as desired. Ladle into individual serving bowls and top with coriander and sliced avocado.
This goes well with quinoa or cauliflower rice.
